Tofu Methi Egg Roast. The original recipe was a combination of feta cheese and spinach leaves. I don't get feta here and I didn't have a bunch of spinach at the time I decided to do it. So again I made a spicy Indianized version using kasoori methi and tofu.

The tofu crumbles are tossed along with chopped methi leaves, onions and green chillies along with cumin powder, lending to a very simple flavour and robust taste.  The Tofu Methi Paratha is cooked in ghee to give it that crisp and flaky outer.

Place tofu, eggs, onion soup mix, and soy sauce into a food processor or blender; process until combined.

  1. Make a wet paste of 2 onions, green chillies, ginger garlic paste, tofu and methi using a blender/mixer and set aside..

  2. Saute the remaining finely sliced onions in the oil till brown..

  3. Add the paste to the sauteed onions and cook for 10-12 minutes..

  4. Add the chilli powder, garam masala and coriander powder and cook for a few more minutes till the raw smell of the masala disappears. Add water and cook to adjust the consistency..

  5. Now add the tomato ketchup and cook for around 5 minutes till the taste blends in. Add salt to taste..

  6. Finally, add the boiled eggs to the mixture and stir it so that the eggs are covered in gravy. Reduce the heat to minimum and cook for around 5 minutes..

Garnish with chopped green onions, Serve hot.

Transfer the pressed tofu to a medium mixing bowl and drizzle with the olive oil and tamari.

Sprinkle the starch over the tofu, and toss the tofu until the starch is evenly coated, so there are no powdery spots remaining.
