Muthokoi instructions

Sort and clean maize and beans. Mix in a sufuria and boil until cooked. Drain any excess water.

Fry onions with ghee till cooked. Add tomatoes and salt and cook. Add carrots and potatoes and stir. Add a little water till potatoes are halfway cooked.

Add the pre boiled muthokoi and mix. Continue cooking, add extra water if needed but not too much as to make a stew. Adjust salt to taste.

Allow to simmer until potatoes are well cooked, stirring occasionally. Serve hot as a whole meal.
