How to Prepare Perfect Jordanian Oozi Delicious, fresh and tasty.

Jordanian Oozi. Some of my time in Jordan was spent with the most hospitable people, Laura and Ray from DiscoverJordan. Besides taking me around to see some of Jordan's history, Laura and Ray kindly put me up at their own house. As a guest in their home, they made me feel very welcome and one night Laura cooked Oozie, a Jordanian dish.

A simple and delicious dish that will take you to the Middle East.

Easy to make at home and no need for a lot of special ingredients yet you will still feel.

Oozi is lamb and rice again, this time marinated lamb shank baked with onions, tomatoes, carrots, celery, peppers, cinnamon and dried lemon.

You can cook Jordanian Oozi using 10 ingredients and 6 steps. Here is how you cook it.

Ingredients of Jordanian Oozi

  1. You need 1 of chicken.

  2. It’s 500 g of ground beef.

  3. It’s 1 of onion cut into 4 pieces.

  4. You need 3 of cardamomum.

  5. It’s 2 of bay laurel leaves.

  6. Prepare 1 of cinnamon stick.

  7. Prepare 2 of rice cups.

  8. It’s of spices(black pepper, salt,cinnamon,Oozi spice).

  9. You need of mixed vegetables(green beans and carrots).

  10. You need of vegetable oil.

The rice underneath contains carrots, peas and thinly.

Place the cut up chicken in a pot along with enough chicken stock to cover the chicken.

Add just a dash of salt.

Skim the top of the stock and remove the froth as it forms.

Jordanian Oozi instructions

  1. In a clean pot…put your onion, salt, cardamomum, bay laurel leaves, cinnamon stick and your chicken after you cut it into pieces and let it bowl for 45 minutes intel the chicken is perfectly cooked. put chicken on side and filter the broth from from all the substance and keep it on the side..

  2. On another pot, but your ground beef with one tablespoon of vegetable oil, let it cook for 7 minutes and the add your mixed veggies, black pepper and salt..

  3. Now for the rice, on a clean pot put your rice, a tablespoon of vegetable oil, Oozi spice and the chicken broth you kept on the side earlier. cook it for 40 minutes..

  4. Grill the chicken or fry it, it’s up to your taste..

  5. When your rice is done, on a big plate you put your rice, the vegetable and beef mix on top and finally the chicken..

  6. And then you have it ! (SAHTEEN WE AFYEH)❤️.

This is an old Jordanian-oriented dish, eaten mostly by people in North Jordan.

Some Jordanians might not even recognize it, nonetheless, it is a traditional Jordanian dish deeply rooted to the country life.

Makmoura, meaning buried, is exactly what it sounds like.
