Recipe: Tasty Fried Methi Muthiya kofta Delicious, fresh and tasty.

Fried Methi Muthiya kofta. Methi muthia are steamed or fried dumplings made from chickpea flour and fenugreek leaves/methi. There are various ways of making muthia… I always make these with chickpea flour. But you can also make them with whole wheat flour, bajra (pearl millet) or jowar (sorghum) flour.

I make steamed muthiyas as a snack to have with tea and will post that recipe soon.

How to Make Fried Methi Muthia.

Methi leaves are washed, chopped and mixed with wheat flour, besan and other indian spices to make a dough.

You can cook Fried Methi Muthiya kofta using 14 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Fried Methi Muthiya kofta

  1. It’s 1 cup of gram flour (besan).

  2. It’s 1/2 cup of coarsely grounded wheat flour (ghev ka karkara atta).

  3. You need 1 cup of chopped Methi leaves (Fenugreek leaves).

  4. Prepare 1/2 tsp of Baking soda.

  5. It’s to taste of Salt.

  6. It’s 2 tsp of sesame seeds.

  7. Prepare 1/2 tsp of Turmeric Powder.

  8. You need 2 tsp of Red Chilli Powder.

  9. It’s 1/2 tsp of garam masala.

  10. It’s 2-3 tsp of sugar.

  11. Prepare 1 of lemon juice.

  12. You need 2-3 tsp of oil.

  13. It’s as needed of Water.

  14. You need as needed of Oil for deep frying.

The dough is then shaped into cylinders and steam cooked.

Finally the steam cooked Muthias' are then sautéed in a pan till they are crispy and light brown!

Methi Muthia is an all time favorite Gujarati (fried or steamed) snack made using tons of fresh methi leaves, besan flour and spices, and is typically enjoyed with a hot cup of tea!

It is also soaked into and enjoyed with Undhiyu, another signature Gujarati curry dish made using winter vegetables.

Fried Methi Muthiya kofta instructions

  1. Take a kneading bowl add gram flour, corsely grounded wheat flour, baking soda, fresh and wash chopped methi (Fenugreek) leaves, salt..

  2. Add sesame seeds, turmeric powder, red chilli powder, garam masala..

  3. Add sugar, lemon juice, oil. Mix it all well. Add required water and knead not soft nor stiff dough..

  4. Once dough get ready. Apply oil on both the hands and make small balls. Make all balls..

  5. Now take iron kadhai on medium flame add oil let get hot. Fry all Muthiyas. Take out on kitchen tissues. Muthiya are ready. Keep in air tight container. It stayes for 1 week..

We usually prepare the steamed one for snacking purpose.

While fried one to use into dishes like undhiyu and shaak.
