This masala egg curry recipe is no-gravy variation of classic Egg Curry in gravy recipe that I posted few years back.

Egg masala gravy recipe - A simple, quick, flavorful, hot and delicious egg gravy that pairs well as a side with plain basmati rice, biryani, chapati, paratha and pulao.

It also goes well with any flavored variety rice recipes like ghee rice, pudina rice, jeera rice, kuska rice or coconut milk rice.

You can have Masala Egg Curry using 12 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Masala Egg Curry

  1. You need 3 of boiled eggs.

  2. Prepare 2 of fresh tomato pureed.

  3. It’s 1 of chopped onion.

  4. You need 1 of green chilli chopped.

  5. It’s 1 tsp of crushed ginger and garlic.

  6. It’s 1 tsp of coriander powder.

  7. It’s 1/2 tsp of turmeric powder.

  8. Prepare 1 tsp of red chilli powder.

  9. Prepare 1 of bay leaf.

  10. You need 1 tsp of pav bhaji masala.

  11. You need to taste of salt.

  12. You need 2 tbsp of oil.

Egg masala gravy is a Indian dish made with boiled eggs, onions, tomatoes, whole spices & spice.

Masala Egg Curry instructions

  1. Boil egg with a pinch of salt, oil and potato piece. Boil for 10 minutes. When you will see the potato become tender. That means the egg also boiled properly. Be there in the hot water. Once it is cool down. Add cool water and peel the shell of the egg. Keep aside..

  2. Heat oil in kadaii. Once the oil is hot.. Fry egg for few minutes. Take out in a plate and keep a side. Add cumin seeds, bay leaf. Fry for few minutes..

  3. Add crushed ginger and garlic. Saute it for a few minutes. Add chopped onion fry till it becomes light brown in colour. Add all the dry masala, salt and tomato puree. Mix properly. Fry till raw masala smell goes off..

  4. Add water as needed. Cover and cook till it become gravy..

  5. Garnish with grated boiled egg and fresh coriander leaves. Ready to serve with hot phulkas.
