Vegetable puffs is a layered savory snack with flaky exterior and soft inside filled with mixed veggies is a delicious and easy to make snack prepared with puff pastry sheets made at home from scratch or store bought. Healthy combo of veggies tossed in an aromatic masala and then baked inside a puff pastry until nicely golden, flaky and crisp on the outside. It is technically summer here and the days have been hot during the past weeks.
Preparing Veg Puff is a three step process; prepare puff pastry sheet, prepare stuffing with cooked mixed vegetables and spices, and bake the puff.
Ingredients to make vegetable puff. for the puff pastry dough - all purpose flour, butter, salt and chilled water. for the filling - Here comes an exciting part 😉 For the filling, I have used boiled potatoes, carrots and green peas as a vegetable mixture.
Ginger Garlic paste, salt, red chili powder,turmeric powder, onion, sugar and garam masala are the ingredients I used for seasoning.

Here I have used store-bought puff pastry sheets which gives the best texture.
These are SO EASY to make, plus taste and texture are PERFECT.
Cut the puff pastry sheets in half.

Chop all the vegetables. Thinly slice the onion..

Heat oil in a pan. Add cumin seeds. Let them pop. Now add onion..

Add salt and turmeric. Cook till the onions get soft..

Now add the vegetables. Cook at simmer for 10 minutes. Check if potatoes are done..

Cut puff pastry in equal sizes. 6 squares. Put the mix veg on the squares. Sprinkle some black pepper..

Cook for 15 minutes at 210 degree C..
Stretch them a bit and line each muffin mold with one half.
Fill with the veggie-mixture and then press together the tops of the puff pastry so that you get little packets in which the veggies are enclosed.
