Frito Pie, new mexican. This Frito Pie was a completely different animal than what we enjoyed in Amarillo, which featured the brisket and a very light dressing of bbq sauce. This dish was all about the New Mexican Red Chile sauce that is not for the faint of heart. I ordered our Frito Pie which is served in a snack size Frito chip bag (completely loved that).

It's a combination of American junk food and traditional Southwestern ingredients—corn, beans, and chile.
It's blue-collar, unpretentious, and a bit odd.

My red chile sauce is adapted from "The Food of Santa Fe".

Brown ground beef in medium skillet, season with salt, onion and garlic powder!.

Add ground beef, along with beans and red chile to a medium saucepan and cook over low heat stirring occassionally..

Once heated, add a handful of Fritos to a bowl..

Top with red chile mixture.

Then top with cheese, onions, tomatoes, cilantro and lettuce and/or sour cream!.

There are a few things I miss about living in New Mexico and close to the top of the list is Frito pie.
