  1. Heat 3 tablespoons of oil in a saucepan.

  2. When the oil is hot, add in a teaspoon of mustard seeds and a teaspoon of cumin seeds carefully. Wait till they crackle..

  3. Add in a sprig of curry leaves.

  4. Add in a cup of finely chopped onions and sauté till they get translucent.

  5. Now add in the minced ginger and garlic or the ginger-garlic paste and cook till the raw smell fades away.

  6. Add in 1/4 teaspoon of asafoetida powder, 1/2 teaspoon of turmeric powder,1 teaspoon of coriander powder and salt as per your taste.

  7. Add in 1 tablespoon of finely chopped cilantro leaves. (Leave aside 1 tablespoon of cilantro leaves for garnishing).

  8. Mix well and add in 3 cups of peeled and diced potatoes.

  9. Cover and cook till the potatoes are cooked well. Keep checking, as the potatoes may stick to the bottom..

  10. There’s no need to add water, the potatoes will cook with the own steam they release. Water will make the dish mushy..

  11. When the potatoes are cooked, garnish with cilantro leaves and serve hot..
