Mochi. Mochi (Japanese: 餅, もち) is Japanese rice cake made of mochigome, a short-grain japonica glutinous rice, and sometimes other ingredients such as water, sugar, and cornstarch. The rice is pounded into paste and molded into the desired shape. In Japan it is traditionally made in a ceremony called mochitsuki.

Sprinkle with additional cornstarch and place mochi seam side down in a paper muffin liner to prevent sticking.

  2. Prepare 2 cups of Mochiko.

  7. Once dough is ready, dust a board and your hands with the extra sweet rice flour and knead the dough until it has a smooth texture..

  8. Shape the dough into individual balls for use or flatten the balls and use them to cover a filling, if you like..

  9. I used raspberries in mine but you can use what you wish..
