Kodo millet idli (Varagu idli). Kodo Millet Idli Recipe / Varagu Idli Recipe. Cooking with millets series has made me think about new recipes which can be made using them all the time. I have share thinai idli recipe before, but it has rice in them.

It is called as Kodra in Hindi and Harka in kannada and Koovaragu in Malayalam.

I have just replaced Varagu arisi with normal idli rice.

Ingredients of Kodo millet idli (Varagu idli)

  1. It’s 2 cups of Millet Kodo (Varagu) -.

  2. Prepare 2 cups of rice Idli -.

  3. You need 1 cup of Urad dal -.

  4. Prepare 1/2 tsp of Fenugreek seeds (methi ) -.

  5. You need of Salt - as needed.

The idli turned out super soft and no one could make out that it is millet idli.

This varagu idli made from kodo millet is another great variation on the idli, giving it a little bit of a different flavor than your standard rice based idli.

Kodo millet idli (Varagu idli) step by step

  1. Wash and soak millet, rice and dal + methi seeds separately for 3-4 hours.

  2. Using the soaked water, grind urad dal + methi seeds first to a smooth and fluffy batter. Take it out into a broad vessel..

  3. Then grind rice into a slightly coarse batter and add it to the broad vessel..

  4. Then grind millet into a batter and add it to the broad vessel..

  5. Mix all three batters nicely, add salt and mix well. The batter must be thick, flowing consistency. If its very thick, add 2-3 tbsp of water..

  6. Leave it for fermentation overnight.

  7. Grease the idli plates and pour the batter into each mould..

  8. Steam them in idli maker / pressure cooker for 10 minutes.

  9. Switch off the stove and let it sit for atleast 5 minutes, before you open the lid..

  10. Serve with hot sambhar or chutney.

Although they are different, they both taste fantastic.

Varagu millet is a fantastic substitute for more traditional grains like rice or wheat due to its high nutrient.

HOW TO MAKE KODO MILLET IDLI/VARAGU/HARKA IDLI RECIPE.
