  1. In a heavy-bottomed wok/karahi/ pan, heat 1Tbsp of oil. Add chopped onions, garlic, ginger and curry leaves. Saute for 4-5 minutes on slow heat, till onions turn slightly brown and raw smell of garlic is no more..

  2. Add desiccated coconut and saute for another minute on slow heat, till coconut is slightly browned..

  3. Now add the chopped tomatoes, salt, turmeric powder and red chilli powder. Saute on low- medium heat, till tomatoes are cooked well and oil separates..

  4. Switch off flame and cool.Grind the above mixture to a fine paste using little water if required..

  5. In the same vessel, heat 1 tsp of oil and add asafoetida/hing and cumin seeds. Let the seeds crackle. Now add the chopped vegetables, little salt and mix well. Add chopped green chillies(optional) and saute with occasionally stirring on low- medium heat for 2-3 minutes, till vegetables are half done..

  6. Now add the prepared onion- tomato paste to it. Add 1/2 cup water and 1 cup milk, sugar and stir well on low heat. Cover and cook till vegetables are cooked well and oil separates..

  7. Serve hot, garnished with chopped coriander and with bread of your choice..
