Hilachas. Place the beef, water and a big pinch of salt in a large saucepan and bring to a boil over medium heat. Remove the beef to a bowl, reserving the broth, and set aside to cool. Ingredients of Hilachas

Prepare 2 tbsp of garlic.

You need 1 of onion.

It’s 2 lb of flank steak.

You need 2 small of pasilla Ancho chile (dry).

It’s 1 of California chile (dry).

It’s 1 of ground cumin.

It’s 8 of tomatoes.

You need 3 large of tomatillos.

Prepare 4 large of white potatoes.

You need 1 of rice (optional).
The name of the dish means shreds or rags, referring to shredded beef, which is the star of hilachas Hilachas is a dish originating in Guatemalan cuisine that is similar to ropa vieja.
It generally consists of boiled, shredded beef served with tomato sauce and tomatillo, potatoes, carrots and Guajillo chiles.
Shred the beef into threads and set aside.
Cook the mixture somewhat and process into a smooth paste.
Hilachas step by step

Season meat with salt pepper and cumin.

Brown the meat.

Meanwhile quarter onion and dice garlic add to pot.

Quarter tomatoes then add to pot.

Quarter tomatillos then add to pot.

Add water enough to cover the meat.

Add the dry chiles.

Bring to boil then reduce to low and cover.

Cook on low for about 3-4 hours until meat is tender.

Take the meat out and shred.

Blend the water with veggies and spices to create a sauce.

In a separate pan have heat on high with 2 Tsp. Of oil and fry meat add about 1tsp. Of garlic, fry until meat is crispy.

Add sauce back with meat.

Cut potatoes like french fries.

Add to sauce and simmer until potatoes are done.

Serve on top of a bed of rice.

Side note* please remember to also season the sauce with salt and pepper I also go a little heavy on cumin but its all on owns preferences my mom goes light on hers so that's why I leave it up to you..
