Parupu Boli. If there is one sweet that is so traditional and made for almost all special occasions in the family or during festival time, it has to be the poli / obbattu. For all kind of functions at home, obbattu will be made a day ahead to be served during lunch. 'Paruppu boli / Puran Poli' is one of my most favorited variety of all. 'Puruppu' means lentils and Poli refer to the sweet, soft flatbread, which melts in our mouth. Paruppu Boli is a flat sweet bread stuffed with a sweet lentil and jaggery filling.
It is also made in Karnataka, Andhra Pradesh, Maharashtra and Goa with slight variations.
Sweet Poli is also called as Sweet Boli, Paruppu Poli, Puran Poli, Bobbatlu etc all these names are same dish only.
It is a very popular, traditional sweet flat bread prepared during special occasions and festivals.

Paruppu Poli Jayashri Boli is a sweet stuffed flat bread recipe, popularly known as obbattu or paruppu poli in South India.
It is usually prepared during Ugadi festival.

Parupu Boli instructions

In a mixing bowl, add Maida, turmeric powder, cardamom powder, salt, ghee and mix well. Then add water and make a loose dough. Then add coconut oil and rest the dough for 30 minutes.

Mean while soak and Cook the Bengal gram in pressure for 3-4 whistles and then mash it well.

In a pan extract jaggery syrup.

In other pan mix the pan and jaggery until it’s thick.

In a rolling pin or smooth surface add oil and roll teh boli dough to a thin round and keep the stuffing and make rounds again and again press well.

Then put in a dosa pan and coat it with ghee and cook till both sides are cooked.
Channa dal, jaggery and coconut puranam gives nice flavor to the Puran boli.
Boli or Obbattu is a traditional sweet specialy made for Tamil, Telugu new year occasions.
Normally the outside layer is made using maida., but here we will see how to make using wheat flour.
