It also saves me money and time in not having to buy a bunch of separate ingredients to make Thai sauce.

Seriously, it's a win-win solution to an easy dinner.

Made this recipe earlier this week for the first time.

  1. You need 1 of Chicken breast.

  2. You need 1 packages of Thai curry paste.

  3. You need 120 grams of ※Cooked bamboo shoots in brine.

  4. Prepare 1 medium of ※Eggplant (slim Japanese type).

  5. It’s 1 of ※Onion.

  6. It’s 1 of ※Carrot.

  7. Prepare 1 of packet ※Shimeji mushrooms.

  8. It’s 80 grams of Green beans.

  9. It’s 2 of Green peppers.

  10. You need 200 grams of Water.

  11. You need 1 of heaping tablespoon Chicken stock granules.

  12. Prepare 1 can of ○Coconut milk.

  13. You need 2 tbsp of ○Sugar.

  14. You need 1 of heaping tablespoon ○ Fish sauce.

  15. You need 1 of Lemon.

  16. You need 3 tbsp of Vegetable oil.

I had read in another blog that Thai Kitchen curry paste was "very hot." Well, no, it wasn't, at least not by New Mexico standards of heat.

My curry ended up being very mild, but it was delicious.

A few months ago I made Sweet Potato and Chickpea Coconut Curry and since then have fallen in love with all things Thai curry.

This Thai meatball curry is outrageously good.

My Family's Seriously Yummy Thai Curry instructions

  1. Chop the chicken and vegetables into bite-sized pieces..

  2. Add vegetable oil into a pot, turn the heat to low. Add curry paste, and fry for about 1 minute..

  3. Add ※ vegetables and briefly stir-fry. Add water and chicken stock granules, and simmer until the chicken is cooked through..

  4. Add the ○ ingredients, simmer for another 5 minutes. Add green beans at the end, and turn off the heat..

  5. Pour over rice or somen noodles, squeeze a lemon on top, then enjoy..

  6. I used green curry paste this time. The same brand also makes red and yellow curries. Use your favourite one..

So flavorful, so rich and so yummy.

These Thai meatballs are made with Thai red curry paste, garlic, ginger, fish sauce, onions, green chilies, spices and Thai basil.

After you shallow fry these savory balls of delicious meat, use the same pan to cook your curry.

I seriously love curry and Thai food is one of my favorites.
