  2. You need of Mutton bone-in.

  3. You need of Salt.

  4. You need of Ginger garlic paste.

  5. It’s of Bengal gram or chana dal.

  6. It’s of red chilli powder.

  7. It’s of Green chillies slit.

  8. Prepare of Turmeric powder.

  9. You need of Oil.

  10. You need of Onions sliced.

  11. You need of Curry leaves.

  12. It’s of Coriander leaves.

Keep a vessel on stove and pour oil and heat.

Now add zeera and fry till it becomes light brown.

Now add rai, kalonji, methi and dry red chilies and fry till red chilies turn brown.

Hyderabadi Ambade ki Katli step by step

  1. Soak dal for almost 3-4 hours. In a pressure cooker, heat oil and saute onions until light pink along with the ginger garlic paste. Also add few curry leaves..

  2. Add the spices along with the mutton bone-in next. Also add the soaked chana dal to it..

  3. Saute until 4-5 minutes and then close the lid. Pressure cook until done..

  4. Open the lid only after the pressure settles down. Add the red sorrel leaves now and mix well..

  5. Cook on a high heat at first for a minute or two and then lower the heat. Cover and simmer until the leafy greens get cooked thoroughly.Do not add any water..

  6. Adjust salt and garnish with freshly chopped coriander leaves before serving. Relish it with some steaming hot plain boiled rice and ghee..
