Padenghi Ganji (Whole Moong-Rice Porridge) instructions

  1. Wash & soak the fenugreek seeds and whole moong overnight in 4 cups of water. Next morning, wash & soak the rice in water for about 10 to 15 min. Drain all these three ingredients & cook in a pressure cooker with 4 cups of water and salt for 2 whistles..

  2. Grind the grated coconut to a fine paste with 2 cups of water. Once the pressure cooker is cooled open the lid. Adding jaggery at this stage is purely optional. Now add the grated coconut paste. Check for the consistency. Do not make it too thick, add sufficient quantity of water to avoid the dish turning very thick on cooling down. Check the salt & add if required. Mix well & bring it to a boil, then simmer and cook for 2min with occasional stirring & off the flame. Serve it hot…

It goes very well with rice.
