The Homemade Lemon Sevai Recipe, is a traditional south indian recipe that is made from from freshly ground rice using a traditional sevai maker. Sevai also known as savory rice noodles is a tiffin speciality in Tamil Brahmin households.
There are many variations to this classic breakfast sevai: lemon sevai, coconut sevai, ell sevai, vella sevai, curd sevai and puli sevai.

Ingredients of Lemon Sevai

It’s of rice sevai.

It’s of Juice of big lemon.

It’s of mustard seeds.

You need of urad dal.

You need of chana dal.

It’s of turmeric.

You need of Salt.

Prepare of curry leaves.

You need of oil.

You need of green chillies slit (adjust).
Lemon Sevai is a traditional evening tiffin in Tamilnadu.
In marriages, for evening snack, Lemon Sevai is one of the common evening snack.
Lemon sevai is much similar to lemon rice.
The tempering and adding lemon juice is same as Lemon rice.
Lemon Sevai instructions

Boil 1 Lt water with 1 TSP salt. Switch off.

Add Sevai immediately, cover and soak for 5 minutes. Sevai will get cooked. It should not be squishy.

Drain excess water and rest for 20 minutes.

Heat oil in a pan and splutter mustard seeds.

Add Dals and roast until golden brown.

Add turmeric, green chillies and curry leaves. Stir for few seconds and switch off. Let it cool for 5 minutes.

Add lemon juice and salt. Mix well.

Add Sevai and using hands gently mix until Sevai is well coated with the seasoning. Serve with coconut chutney.
Instead of cooked rice we are going to use cooked rice noodles.
Lemon Sevai Preparation: Soak the chana dal this is optional I would like to do because it tastes very good.
Heat oil in a kadai and temper it with dried red chili, mustard seed, urad dal, Hing and curry leaves.
We usually make plain savoury sevai or this lemon sevai.
Though I prefer the sweet version I can have this when accompanied with the sweet version.
