1st step : grate the potatoes, add flour, salt, chilli powder and then mix.

Then in a pan add 1 tbsp oil add chopped onions, tomatoes, garlic paste, turmeric powder, coriander powder, salt, chilli powder. Now saute till the tomatoes are soft. After its done put the tomato mixture aside.

In the same pan add 1 tbsp oil, add the potato mixture and spread evenly on the pan. Let one side get golden coloured and then flip the mixture. Now put the tomato mixture on top and spread evenly. Now break few eggs on top of them and let the eggs cook. Cover the pan for about few minutes. Its ready..
While the potatoes are cooking you can prep the tomatoes and eggs.
Once the potatoes are tender they are then crisped in the skillet and turn crunchy on the outside.
Tomatoes are added in at the last few minutes to soften up a bit.
