Seafood Vegetables Medley. A great way to impress your family and friends over lunch or dinner effortlessly. This is the seafood version of the more popular Filipino Beef Salpicao, which is mainly stir-fried beef with brown sauce. Melt the butter in a large frying pan with the olive oil over medium heat.

  1. You need of Prawns.

  2. Prepare of Fish filets / fish cakes.

  3. You need of Squids.

  4. It’s of Cooking oil.

  5. Prepare 3 cloves of garlic, minced.

  6. Prepare 1 inch of ginger, sliced.

  7. Prepare 1 of Broccoli.

  8. It’s 1 of carrot, sliced.

  9. Prepare 1 of spring onion, chopped.

  10. You need of (sauce).

  11. It’s 1 cup of water/chicken stock.

  12. Prepare 2 tbsp of Oyster sauce.

  13. Prepare 1 tbsp of soy sauce.

  14. You need 1.5 tsp of sugar.

  15. Prepare 1 tbsp of Chinese rice wine.

  16. Prepare to taste of Salt and black pepper.

  17. It’s of Slurry = corn flour + water.

There is also nothing that says you can't create your own seafood medley from what you might have on hand - you don't have to depend on a pre mixed package.

There are so many different ways to customize your veggie stir fry, the combinations are endless!

Meat: add in some chicken, pork, shrimp, beef or tofu.

Vegetables: asparagus, bean sprouts, celery, zucchini, cauliflower, onions or tomatoes add more of variety of vegetables.

Seafood Vegetables Medley step by step

  1. HEAT oil in pan, toss and cook fish cake, prawns and squids for about 2 minutes. Dont overcook it, REMOVE and keep warm.

  2. In a bowl, MIX sauces except slurry, have a taste and adjust to your liking.

  3. HEAT pan, saute garlic and ginger until fragrant, approximately 1 - 2 minutes.

  4. ADD carrots and broccoli, toss and cook for about another minute, ADD water/stock.

  5. ADD cooked prawns, fish cakes and squids into the pan, cook for another 1 and a half minute, actively tossing.

  6. TASTE and adjust seasoning.

  7. ADD slurry into the pan, stir until thickened while making sure there are no clumps in the sauce.

  8. GARNISH with chopped spring onions and SERVE with rice!.

Nuts: almonds and cashews are great to stir in as well.
