Paruppu Usili is the crumbled soft dal which is combined with vegetables to make very delicious Poriyal variety or dry curry.

The most common vegetables used for Usili are Banana Flower, Beans and Cluster Beans.

But we can also try Asparagus, Broccoli, spinach, Radish greens and many more vegetables.

Beans Paruppu Usili step by step

  1. Make a checklist. Keep all ingredients within your reach.

  2. Soak Moong in 3 cups of water –about 30 minutes. Make a paste with red chiles, coriander seeds, and red chiles in a blender. Transfer the paste into a microwave-safe bowl. Microwave for 15 minutes, stirring in between..

  3. Cook beans with steam under pressure in a pressure cooker until it is tender. Do not overcook. Over medium heat in a heavy skillet pop mustard seeds in hot oil-21 minute. Stir in fennel, asafoetida, turmeric and curry leaves-2 minutes. Stir in cooked beans adding masala powder- 5 minutes. Stir in the microwave cooked paste, break if there is any lump. Mix them together. Simmer the heat. Salt to taste. Remove from heat after 5 minutes. Usili is ready..
