Sai Bhaji. A traditional Sindhi recipe - the Sindhi Sai Bhaji Recipe, is a healthy yet delicious one pot dish, that is popular in almost all Sindhi households. A wholesome dish that's packed with lentils, greens and a pot load of other seasonal vegetables. A nutritious and a balanced meal, it is cooked to perfection with just the right amount of spice and tempered with ghee and garlic.

It is a popular household dish in Pakistan, India, and among the Sindhi diaspora.

Sai Bhaji is protein packed vitamins rich dish which can be accompanied by any bread or rice.

A melange of veggies like spinach leaves, dill, sorrel and brinjal, this main dish recipe is ideal for buffets, dinner or parties.

Ingredients of Sai Bhaji

  1. It’s 1 Bunch of palak.

  2. You need 1 cup of chopped dil leaves.

  3. It’s 1/2 cup of sour leaves (optional).

  4. Prepare 1/4 cup of coriander leaves.

  5. Prepare 2 of onions,chopped.

  6. You need 2 of tomatoes chopped.

  7. You need 1 cup of chana dal soaked for min 30 mins.

  8. You need 1 teaspoon of cumin seeds.

  9. It’s 2 of green chillies.

  10. You need 1 teaspoon of turmeric powder.

  11. Prepare 1 teaspoon of red chilli powder.

  12. It’s 2 teaspoons of garam masala powder.

  13. Prepare 2 teaspoons of Coriander powder.

  14. It’s to taste of Salt.

  15. You need 2 Cups of water.

  16. It’s 2 tablespoons of oil.

  17. You need 1 pinch of hing.

  18. Prepare 1 tablespoon of ginger garlic paste.

  19. It’s 2-3 cloves of garlic.

Sai bhaji is best served with bhuga chawal; it is a Sindhi rice preparation wherein caramelized onions give a great taste to it.

However, sai bhaji can be served with plain rice or chapattis or parathas too.

  1. In a pressure cooker, heat oil now adds cumin seeds let them splutter, now add hing, green chillies, once fried add onions..

  2. When onions are translucent add ginger garlic paste, add tomatoes, salt, turmeric powder, and all dry masalas except garam masala, when tomatoes are mushy add chana dal..

  3. When chana dal is nicely mixed with masalas add all greens.

  4. Now nicely mix everything and add water and allow to cook for 5 minutes of medium flame and 15 mins on low flame.

  5. Once the pressure releases, open the cooker..

  6. Now blend the palak with hand blender or wooden blender..

  7. Keep it back on flame and add garam masala and let it simmer. For five minutes..

  8. In a tadka pan add oil and chopped garlic cloves and give tadka on top..

  9. Nutritious sai bhaji is ready to serve, it can be served with steam rice or bukha chawal(caramelized onion rice).

Sai bhaji, a traditional bhaji from the sindhi repertoire is a nutritious and balanced meal in itself when served with Cooked Rice or rotis.

This is because it uses an extensive set of ingredients ranging from greens and dal to veggies too, which when perked up with tomatoes, spice powders and pastes becomes a tongue-tickling and sumptuous bhaji.
