The Lauki/ Doodhi Kofta is a simple, healthy recipe where the koftas are not fried.
Traditionally Kofta's are fried and loose it nutritive value.
But in this Lauki Kofta I have pan fried them in a Non-Stick Kuzhi Paniyaram Pan and simmer the kofta's in a quick and simple spiced tomato gravy.
The Lauki/Doodhi kofta's are big favourite in my family, and considering they are non-fried.

Rinse peel and grate the lauki. Soak moong dal for 10 mins. In a mixer grinder grind the soaked moong dal coarsely and keep aside..

In a mixing bowl add the grated lauki along with grinned moong dal (no need to squeeze the water from the lauki) To this add 1 chopped onion 1/2 tsp ginger garlic paste, turmeric powder red chilli powder and salt..

Mix the mixture properly and make small round shape balls..

Heat oil in a kadai and fry the kofta in the oil till they are golden brown from all the sides. Frying must be done on a medium flame Drain the fried lauki kofta in a tissue kitchen towel..

Heat 2 tbsp oil in a pan to this add bay leaf cinnamon cardamom cumin seeds and sauté for a second.Now add chopped onion and sauté till it gets translucent.To this add ginger garlic paste and cook for a min.

Now add turmeric powder coriander powder and Kashmiri red chilli powder. Cook the masala for 4 mins or till the oil starts separating. Now add garam masala and salt.

Now add 1 cup water to make the gravy. Cover with the lid and cook further for some mins to get the desired consistency..

Now it’s time to add the fried lauki ke kofte into the gravy. Cook for a min and switch off the burner..
