Ingredients of Seppankizhangu Roast/ Arbi Roast/ Taro Roast

  1. It’s of Seppankizhangu.

  2. It’s of Sambar powder.

  3. It’s of Chilli powder.

  4. It’s of Salt as per your taste.

  5. You need of Water as required.

  6. You need of Oil for frying.

Seppankizhangu(also known as Arbi / Taro Root) is a root vegetable which I never tasted before marriage and was introduced to me by my husband.

Seppankizhangu Roast/ Arbi Roast/ Taro Roast step by step

  1. Wash and put the seppankizhangu in a pressure cooker. Add some water to it. Let it cook for 2 whistles..

  2. When the pressure goes off. Open the lid and take out the cooked seppankizhangu. Cool it completely..

  3. Then peel off the skin and cut the seppankizhangu in disc shape. Place the pieces one by one separately in a large saute pan..

  4. Place that sautepan in the stove. Switch on the flame. Keep the flame low..

  5. Then add drop by drop oil for all the pieces. Once its fried on one side turn it to other side and add oil surrounding all pieces..

  6. After 5 mins sprinkle some salt above all pieces and mix well. Then separate the pieces as before..

  7. Add oil gradually for 5 mins once. Let it roast in low flame for 15 mins..

  8. Add sambar powder and chilli powder. Add some oil above it and stir well. Then separate the pieces as before. Let it roast for another 10 minutes without adding oil..

  9. Roast in low flame until it turns crispy..

  10. Now its ready to serve. You can add this as a sidedish for your lunch..

Cook them in a pan filled with water, just enough to cover fully.

Seppankizhangu Roast is another favourite roasted vegetable of mine.

It is easy to make and the roasted taro roots can be served with some sambar and rice.
