  1. Soak chana daal in the night or at least 4 hrs before making the curry.

  2. Slice brinjal vertically and put the slices in water(Salt added) as soon as they are cut.

  3. Slice onion and chillies also vertically.

  4. Heat oil in a kadaai and add mustard,jeera and hing.

  5. Put sliced onion and chillies… saute well.

  6. Add curry leaves.

  7. Once onion changes colour, add ginger garlic paste. Mix well. Let it fry for two mins so that the raw smell is gone.

  8. Now, add sliced brinjal and mix well. Let it sautee for 3-4mins.

  9. Add soaked chana Dal. Mix well.

  10. Now, add salt as required. Mix well.

  11. Cook with a lid on for 10-12mins. No need to add water.

  12. Now that brinjal and dal are cooked completely, add chilli powder. Mix well.

  13. Add garam masala. Mix well and take off the stove.

  14. Serve with hot rice or roti.

Baby brinjals are cooked with tamarind, cooled, stuffed with spice powder and fried.
