The recipe is a Banarsi style stuffed red chilli pickle which tastes awesome.

You need 2 kg of red chillies.

Prepare 250 grams of fennel seeds(saunf).

You need 100 gms of coriander powder.

It’s 25 gms of rai.

It’s 100 gms of amchoor powder.

It’s 25 gms of methi dana.

You need 25 gms of kalongi.

You need 25 gms of yellow mustard.

Prepare 50 gms of turmeric powder.

You need 25 gms of heeng.

It’s to taste of Salt.

You need 2 tbsp of white vinegar.

Prepare 250 gms of mustard oil.
Its excellent with any Indian meal.
You can have it with chapatis or rice or parathas.

Take a wok and add oil. Heat it and then switch off the flame and let it cool..

Crush methi dana and rai. Now add heeng and all the Masalas to the oil and mix well..

Once it’s completely cooled down add vinegar and mix gently..

Now slit chilies and stuff the Masalas in each chillies..

Take a clean glass jar and put chillies in it. Add some more oil so that chilies are nicely soaked..

Keep the jar in sun for 2-3 days. Then you can enjoy the pickle..
Thick red chilli pickle or Lal Mirch ka Achar is one of my all time preferred pickle.
I can have it with just plain Parantha, Poori or simple Dal and Chawal.
I liked the Bharwan Lal Mirch ka Achaar because it is quite different from the South Indian pickles, which tend to be spicy (especially those from my home state of Andhra Pradesh).
This pickle was mild and packed a punch when it came to flavour: the aroma and sweetness of fennel; the mild bitterness and heat of mustard; the tanginess of amchur; and of course, the flavour of the mustard oil.
