I wanted to garnish with kara boondi, so it too so long for me to both make this south Indian curd vada.

Curd vadai recipe is made at most of the homes with leftover Vadais, but my mom always makes Thayir vadai with freshly made Vadais as we all love curd vadais.
Today I am sharing the recipe of how to make South Indian style curd vadai.
I couldn't make a very detailed step wise instructions as how to make vadais.
One is the lovely Paneer butter masala for main coarse and the second one is this cool, tangy and delicious Thayir vadai for appetizer.
Thayir vadai instructions

Urad dal ko 2 hour water Mein sock Karein..

2 hours baad dal ka excess water drain Karein..

Dal ko mixer jar Mein dale or add Karein hing, salt, ginger and green chilli….

Dal ko smooth hone tak grind Karein.

Appam maker ko oil se grease Karein or dal se vadai ready Karein. (aap isko fry bhi kar sakte hai).

Ek bade Bowl Mein curd dale. Add Karein salt and grated coconut or whipped Karein..

Tadka pan Mein 1 spoon oil dale add Karein dry red chilli or 1 spoon urad dal….

Sim flame per dal ko crispy hone tak fry Karein.add Karein mustard seed and curry leaves. Saute Karein..

Tadke ko curd Mein add Karein or mix Karein..

Vadai ko curd Mein add Karein..

I am a big big fan of Tamil nadu style thayir vadai.
I love this South Indian style dahi vada more than sambar vadai & rasa vadai.
My FIL used to buy thayir vadai/Curd vada ( Perugu vada in Telugu) from hotel Saravana bhavan and Guptha sweets whenever we visit Salem.
Vada tastes soft and spongy soaked up in curd with a nice flavor.
Thayir Vadai (Curd Vadai / Dahi Vada) is ammas favorite and I have seen her order it when we visit restaurants.
