Cooking claypot chicken rice in a rice cooker may not be authentic or give that burnt fragrant from the charred rice but it is more practical for most of us who have busy lives. This one pot dish can serve many people depending on the capacity of your rice cooker.

Heat some oil in a wok/frying pan and fry garlic, ginger, shiitake mushroom, chicken (with all the marinating sauce), salt, sugar, and pepper.

As its name implies, this rice is cooked in a clay pot and served hot straight from the stove.

Ingredients of Claypot Rice in Rice Cooker

  1. Prepare 300 gr of rice, rinse a couple times until the water gets clear, drained.

  2. It’s 400 ml of water.

  3. You need 3 of bacon slices, cut to taste.

  4. It’s 3 of lap cheong (chinese sausage), sliced.

  5. It’s 2 tbs of sesame oil.

  6. You need 4 of garlic cloves, minced.

  7. Prepare 2 of shallots, finely chopped.

  8. It’s 2 cm of ginger, grated.

  9. Prepare 10 gr of dried shrimp (do not need to be soaked), if the size is large, chop them.

  10. It’s 1 tbs of oyster sauce.

  11. It’s 1 tbs of dark soy sauce.

  12. It’s 1 tsp of salt.

  13. You need 1 tsp of sugar.

  14. Prepare to taste of ground black/white pepper.

  15. It’s of Frozen vegetables as needed (optional).

I don't have a clay pot, so to replicate this at home, I used my rice.

Claypot rice is created by the Cantonese people from Southern China and now has become a popular rice dish across Southeast Asia, especially Hong Kong, Malaysia, and Singapore.

The rice is usually presoaked and then finished cooking in a claypot over a charcoal stove, topped with other ingredients and sauces.

Claypot chicken rice is one of Malaysian's favourite dish and can be easily made at home.
