I loved having three weeks of leisure and fun.

I was immediately drawn to these Oatmeal pancakes because I know how hard it is to.

Ingredients of Healthy Oats Pancakes

  1. Prepare 1/2 cup of oats flour (blended oats).

  2. It’s 1/2 cup of blended oatmeal cookies.

  3. It’s 4 tbsp of all-purpose flour.

  4. Prepare 3 tbsp of granulated sugar/ any sweetener (optional).

  5. Prepare 1 tbsp of baking powder.

  6. You need 3/4 cup of milk (milk of choice).

  7. You need 1/4 cup of melted butter.

  8. Prepare 1/3 cup of apple puree / applesauce.

  9. You need 1/4 tsp of cinnamon.

  10. Prepare 1/8 tsp of salt.

  11. You need of Butter, as needed (for frying).

I used TWO maple and brown sugar instant oatmeal packets in this recipe as I seem to be out of plain instant oats in my pantry right now.

These healthy pancakes are made with bananas, eggs, almond milk (or any milk), vanilla extract, gluten free old-fashioned rolled oats, baking powder, cinnamon and salt.

They're very fluffy, naturally sweet thanks to the ripe bananas.

Healthy Oats Pancakes step by step

  1. In a large mixing bowl, add in all the dry ingredients and mix well to combine..

  2. After, make a well in the dry ingredients and pour in the wet ingredients..

  3. Mix thoroughly until everything is well combined and there are no lumps..

  4. Let the batter sit on the counter uncovered at room temperature for 10 minutes..

  5. After, heat a shallow frying pan over medium low heat and add in about 1 tablespoon of butter, let the butter melt and swirl the pan to evenly coat the bottom with butter and lower the heat to low..

  6. Measure a little less than 1/2 cup of the pancake batter per pancake and with a spoon, spoon the mixture into the pan and use the back of the spoon to spread out the batter as this batter is fairly thick in consistency..

  7. Cook for about 4 minutes on low heat flipping halfway through (be careful, these pancakes are a bit crumbly). Repeat for the remaining batter..

  8. After frying all the pancakes, stack them up as desired and serve with toppings of choice (butter, fresh fruit, jam, cream, honey, maple syrup,etc.) Enjoy!.

I am a big fan of eggs for breakfast but I get tired of it and so I often look for other ideas, but the other ideas aren't exactly healthy.

These were pretty good, kids and husband liked them.

I like the addition of the oatmeal.

I doubled this recipe, blending the dry ingredients in the processor first, then the wet just to incorporate it.
