We've been eating this okonomiyaki for years. -If you knead the batter while mixing, okonomiyaki will have sticky texture, so mix gently by lifting from the bottom of the bowl. -When you are eating, If you have the pork slices on top, they will. Okonomiyaki (お好み焼き) is another Japanese street food, like Yakisoba (Japanese Stir Fried Noodles) which I posted few weeks ago.

Other people suggested to buy Okonomiyaki Flour but you do not need it.

The chopped cabbage is mixed with the batter, the pancakes are grilled or pan fried and then basted with okonomiyaki sauce and topped with other ingredients like green onions and sesame seeds and served with homemade Japanese mayonnaise.

Okonomiyaki literally means 'grilled as you like it', and is made from seasoned flour, cabbage, and various fresh meats and vegetables mixed together and cooked in a frying pan just like a pancake.

My Original Pan-Fried Okonomiyaki step by step

  1. Shred the cabbage. No need to remove the core! Shred it together..

  2. Add all the ingredients into a bowl..

  3. Mix the batter gently by lifting from the bottom of the bowl with a spoon. Please dont stir too much..

  4. Thinly pour the oil in a heated frying pan. (When you are using a non-stick one, you dont need oil.) Pour in 1 portion of the batter, and adjust the shape, then place the pork slices on top..

  5. Cook for 4-5 minutes over medium heat. When nicely browned, flip, and cook for another 4 minutes. The cooking time is just a suggestion..

  6. Transfer to a plate pork-side down by sliding from the pan..

  7. Spread on the sauce, mayonnaise, and sprinkle with aonori seaweed and bonito flakes to your liking..

Prepare this easy recipe for lunch or dinner, and watch it become a family favourite.

Option: Use all-purpose flour or mix with whole wheat flour.

Option: Add a cup of shredded seasonal vegetables like zucchini, sweet potato, butternut squash, carrots, etc. to the batter!

The first time I tried okonomiyaki, Jack and I were in Hiroshima.

In Hiroshima-style okonomiyaki, layers of fried vegetables, meat, seafood, noodles, and eggs top a thin flour pancake.
