Ingredients of Bhuna Oats Khichdi

  1. It’s 1 cup of oats dry roasted.

  2. Prepare 1/2 cup of split green gram (moong dal) dry roasted.

  3. It’s 2 cups of chopped potato carrot, beans & cauliflower.

  4. You need 1/4 cup of green peas (I used frozen Peas).

  5. It’s 3-4 tbsp. of mustard oil.

  6. Prepare 1 tsp. of cumin seeds.

  7. It’s 2 of bay leaves.

  8. Prepare 2 of dry red chilies.

  9. It’s 1" of cinnamon stick.

  10. Prepare 2-3 of green cardamoms.

  11. It’s 4-5 of cloves.

  12. Prepare 1 tsp. of ginger grated.

  13. You need to taste of salt.

  14. You need 1/2 tsp. of turmeric powder.

  15. Prepare 1 tsp. of roasted cumin powder.

  16. Prepare 1 tsp. of garam masala powder.

  17. It’s 8-10 of almonds (opt).

  18. Prepare 1 tsp. of ghee.

It is more of a Pulao in the Khichdi family than a Khichuri.

It can have non-vegetarian components like meat, eggs or prawn added to it.

The name "Bhuni" or "Bhuna" comes from the step that involves roasting of the moong dal and frying the rice etc. to make this.

You could also include one dal variety, and make the khichdi with oats, millets, and other grains.

Bhuna Oats Khichdi instructions

  1. Boil the roasted moong dal in 1 cup water for 4-5 whistles. Keep aside..

  2. Marinate the chopped veggies with a pinch of salt and turmeric powder.

Heat 2 tbsp. oil and fry the marinated veggies in batches till light brown. Then pressure cook in 1 cup water for 1 whistle. Keep aside..

  1. Heat remaining oil & temper with dry red chilies, bay leaves, cinnamon, cardamoms, cloves, ginger and cumin seeds. Saute for a few seconds..

  2. Now add the oats, all the dry spices.

  3. And 2 cups water. Mix well and simmer on a low flame till it is cooked..

  4. Add the boiled dal, boiled veggies, almonds, green peas and 1-2 cups water (depending on the consistency desired)..

  5. Mix well. Cover & simmer for 2-3 minutes. Switch off the flame and drizzle some ghee over it..

  6. Serve with begun bhaja (eggplant fry), fried red chilies, any side dish and lime wedges for a soul satisfying meal..

If you think khichdi always look yellow and boring, you can break the monotony of the dish with lots of veggies, just like Bengalis and South Indians do.

The Bengali khichdi has an addition of mixed vegetables that we generally add to pulao like - cauliflower, green peas, potatoes, carrots etc.

I just had potatoes, cauliflower and peas and hence added these to the khichdi.

Adding the vegetable to this rice and lentil preparation makes it a wholesome one-pot meal.
