Dondakaya in Telugu or Tindora in Hindi or Ivy guard in English is one of the favourite vegetable for my kids. This is super hit recipe which I tried to make at home ,after eating in some function.

Ivy gourd is called as dondakaya in telugu, kovakai in tamil, tondekayi in kannada, tindora in gujarati and tendli in marati.

It is used to make stir fry, curry and dondakaya pachadi in Andhra cuisine.

To make dondakaya fry, you can slice them or chop them.

You can have Tindora Kaju Fry (Dondakai Cashew Pakodi Koora) using 8 ingredients and 6 steps. Here is how you cook it.

Ingredients of Tindora Kaju Fry (Dondakai Cashew Pakodi Koora)

  1. Prepare 1/2 kg of Tindora.

  2. Prepare 1/2 cup of Besan (gram flour).

  3. It’s 3 tbsp of redchilli powder.

  4. You need 1 tsp of tumeric.

  5. It’s of salt.

  6. You need of oil for deep fry.

  7. You need of curry leaves 5-6.

  8. It’s of cashew nuts.

Heat coconut oil in a pan add red chilly, mustard seeds, cumin seeds, urad dal, add chopped ginger, green chilly, hing, curry leaves, chopped onions, salt and mix it.

Chop Tindora in any shape desired and I like to partially boil in the microwave as it tends to be a tad faster!

In a heated sauce pan, add oil and the rest of the seasoning.

After the mustard seeds splutter and the dals get a nice brown hue, add the partially cooked dondakaya and cover with a lid.

Tindora Kaju Fry (Dondakai Cashew Pakodi Koora) step by step

  1. Clean Tindora.Slit each into four pieces..

  2. Add besan in a bowl.Add red chilli powder,tumeric and salt and then put the tindora pieces and mix well.If required add little water and mix well..

  3. Heat oil in sauce pan.Put the tindora pakodas and fry till they are golden in colour..

  4. Fry the cashew in oil remove it on tissue paper.Then fry curry leaves and remove it on tissue paper..

  5. Mix the fried cashew curry leaves with the tindora pakodas.Add little red chilli powder and salt and chat masala (optional) and mix well..

  6. Serve with plain rice and Smbhar as side dish..

Tindora fry / Dondakaya vepudu is one of the easiest of the side dishes and yet delicious!!

During my childhood, we were told that tindora is one such vegetable which has no essential nutrients and causes dullness of the brain ('Mandha Buddhi').

So it was always a neglected vegetable at home.

Drain and c arefully stuff the filling into each of the tindora and set aside.

Keep flipping the tindora so they are evenly cooked throughout.
