It’s 500 Grams of tindora.

Prepare 2 of Tomatoes.

You need 3-4 of Potatoes.

Prepare 1-2 of Green chilli.

It’s 6-8 of Garlic gloves.

You need 2 Teaspoon of coriander powder.

You need to taste of salt.

It’s 1 Teaspoon of red chilli powder.

You need 1 Teaspoon of turmeric powder.

Tindora Potato Vegetable, lentil curry, and rice was my comfort food and I hope it will be yours.
Tindora is the Gujarati word for ivy gourd-tiny little baby watermelon looking gourds that grow suspended on vines.
They are the size of a thumb, vivid green, and have white stripes down the side.
They are completely delicious and have a unique slightly bitter-slightly sweet flavor all their own.

Fill A big bowl of water and dip all the tindoras for few minutes and then.gently rub to remove all the dirt. Wash twice and drain excess water. Keep them in A strainer..

Finely chop the tomatoes and green chilli and keep aside. Than remove the tip of tindora on both the sides and cut it into roundals as shown in the pic below.

Now heat oil in A deep vessel for deep frying. While it heats peel wash and dice the potatoes and keep them in water otherwise they wl turn brown..

Now deep fry tindoras not all together. Take 1/4 portion every time and fry on low to medium flame. Remove and kee aside in A dish. Once all the tindoras are fried…fry the potatoes and keep aside (strain the excess water completely before frying).

Now take A deep pan heat 2 teaspoon oil add finely chopped garlic, pinch asoefotida and finely chopped tomatoes as well as green chilli sprinkle some salt, cover and cook the tomatoes untill partially cooked then add coriander powder turmeric as well as red chilli powder as per your taste. Mix well, add the fried tindoras and potatoes mix thoroughly to blend everything well and serve with some nice rotis..
Add the chopped tomatoes and cook until they turns soft and a little mushy.
Once the tomatoes are soft and mushy, add the sliced apple gourd/tinda, season with salt and cook until the gourds are half cooked.
Now, add in the red chilli flakes, mix well and let the apple gourd cook until done with the lid closed.
Tindora is a green vegetable which is popular in many parts of India and is known by many names (ivy gourd, kovakai, tondli, giloda…just to name a few).
It resembles a watermelon but is only the size of your little pinky.
