  8. Prepare 2 of cardamoms powder.

Getting the ratio right: back home, I have often heard this from people that for making the best sooji halwa, use same amount of ghee, sugar and sooji and double the water.

Now that might seem like a lot of ghee but it does really make the best halwa.

  1. In a non stick pan, add ghee.

  2. Dry roast the suji on low heat till it changes colour. Keep stirring continuously for it not to get burnt. Nowadays you get pre roasted suji in stores. This reduces the roasting time.

  3. When the ghee gets hot add the suji and mix well.

  4. In the meantime boil two tea cups of water.

  5. Now add the jaggery, cardamoms, raisins, roasted cashew and almonds in the semolina.

  6. Add the hot water and mix well till you get the desired consistency on low heat.

  7. Sweetness adjusted according to one’ taste turn off the gas when you pour the hot water in the pan. It avoids stuttering and the hot stuff coming on you. Once you pour the hot water turn the gas on again whatever measurement you take for the suji, the jaggery should be approximately half of it and water double of it you can use milk instead of water or use half milk and half water.
