How to Summer Delicious Matoke and fried spinach Delicious, fresh and tasty.

Matoke and fried spinach. Matoke is a variety of banana indigenous to southwest Uganda. It comes from the family of bananas known as the East African Highland bananas. Matoke is used mainly for cooking when they are green and unripe.

Remember these beautiful green bananas I had shared some time ago?

Look at the size of that matoke!

They came from one of the banana plants here in the compound and I have been thinking of different ways to use them up before they ripen.

You can cook Matoke and fried spinach using 10 ingredients and 7 steps. Here is how you achieve that.

Ingredients of Matoke and fried spinach

  1. It’s 12 of green matoke (chopped).

  2. You need 8 of medium sized potatoes (diced).

  3. You need to taste of Salt.

  4. Prepare 4 bunches of leafy spinach.

  5. Prepare 3 of large carrots (grated).

  6. Prepare 2 of large onions (diced).

  7. You need 4 of large tomatoes (diced).

  8. It’s to taste of Garlic.

  9. Prepare 1 teaspoon of royco powder.

  10. It’s 1 of green pepper.

Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop.

In Uganda, plantain bananas are often wrapped in plantain leaves and steamed until tender.

This dish can be made with or without the meat.

Rwanda and Uganda produce bananas in large quantities.

Matoke and fried spinach instructions

  1. Place some water with some little salt on the fire. Pre-cook the chopped matoke and diced potatoes..

  2. Drain the water and place aside..

  3. Cook the onions until lightly brown. Add in a handful of tomatoes and stir..

  4. Mix the royco with 1cup of water and add to the sufuria. Bring to boil. Add the pre-cooked matoke and potatoes..

  5. Layer the diced carrots, green pepper and garlic. Let it simmer for 10-20minutes..

  6. Fry the spinach separately with the onions and tomatoes. Add a pinch of salt..

  7. Plate, garnish and serve. Enjoy your meal..

Matoke is made from bananas, fried with onions and seasoned with salt.

Freshly ground spices give your matoke a hot-sweet taste that you'll enjoy.

You may have it slightly wet, or with a spoonful of raw vegetables.

Some fried beef does the trick too.
