Yam porridge and vegetables. Nigerian Yam Porridge with vegetables is a tasty meal you have to try out. It is prepared with a combination of yam and fresh green vegetables. A sure healthy way to eat carbs and get your veggies in.
Green amaranth and ugu are the most common leafy vegetables used.
Others are kale, kerenkere , arirala etc.
Peel off the back of the yam and slice to serve-able bits.

It’s of Yam.

You need of Turmeric.

You need leaf of Ugu.

You need of Maggi.

Prepare of Pepper and salt.

Prepare leaf of Dried utazi.

If you like you can slice them into tiny bit, it is the best size for porridge yam.
Before you cook Yam & Vegetable.
Wash the yam cubes and place in a sizeable pot.
Wash and cut the leafy vegetables, I used frozen spinach.

Peel,cut and wash the yam and put it in a pot.

Add required amount of water and add all ur ingredients allow to cook till is soft.

Then add the veggies and taste for salt, allow to steam for some minutes then serve after turning.
Just leave to defrost a little bit and cut into small pieces.
Then when fully defrosted, wring out the excess water.
Yam Porridge can also be referred to as yam soup.
It is mainly yam cooked with ingredients and the resulting dish contains some soupy liquid.
It is usually not cooked with added vegetables but I always add a little to add some green colour to the meal (see video).
