Recipe: Yummy KERALA FISH FRY/AYALA PORICHATHU Delicious, fresh and tasty.

KERALA FISH FRY/AYALA PORICHATHU. So visit your nearby market soon, buy some fresh mackerel, take some, make a mouth-watering ayala Curry and fry the remains :-D Here is the fish fry recipe and my Kerala style delicious lunch platter with thumpa poo choru ;-) (boiled rice), Kudam puli etta ayila curry (Kerala style Mackerel Fish Curry with Gambooge(cambogia)/ pot tamarind. Fish Fry (Meen Varathathu/Meen Porichathu) is very common and one of the most favorite dishes in Kerala. This recipe is as simple as it can get, and goes well with any type of fish.

It is the most famous recipe for them where fish is fried with strong spices in coconut oil, which is one of my favourites.

Place one or two fish slices on the bed of curry leaves in the oil and fry the fish on low flame.

Fry the fish to a golden brown color on both sides.

You can have KERALA FISH FRY/AYALA PORICHATHU using 8 ingredients and 2 steps. Here is how you cook it.

Ingredients of KERALA FISH FRY/AYALA PORICHATHU

  1. It’s 500 gms of AYALA (Mackerel)FISH.

  2. You need 1 tbsp of Kashmiri Red Chili Powder.

  3. It’s 1 tbsp of Crushed Blackpepper.

  4. Prepare 1/4 tsp of Turmeric.

  5. It’s as required of Salt.

  6. Prepare 2 tbsp of Lemon Extract.

  7. Prepare 1 tbsp of Ginger Garlic Paste.

  8. You need as required of Coconut Oil for Shallow Fry.

Drain off the oil and transfer to a serving plate.

Add more curry leaves and oil to fry the next batch of fish slices.

Serve hot as a starter or as a side dish with rice dishes or rotis.

Heat oil in a pan and shallow fry brinjal pieces till light brown color on both sides.

KERALA FISH FRY/AYALA PORICHATHU instructions

  1. Rub salt and clean the fish with water. Drain and keep aside. Mix all the spices, ginger garlic paste together and add lemon juice and a little water and salt to it. Make a thick paste. Make marks on the fish using a sharp knife and rub the spice mix paste all over the fish and marinate for 10 minutes or more if you have time..

  2. Heat a pan with coconut oil and when hot place the fish and cook until crispy and golden brown from both sides. Done !.

Meen Porichathu/ Fish Fry Fish fry is an essential item on the menu anywhere in Kerala.

The fish varies, the marinade varies, but a noon meal (oonu) is not a meal without it.

The hotels stick to the economical big fish but there is a variety of small fish freshly caught and sold every day which makes every fish fry a different one.

Still, at times I can't help sneaking posting a few which top my list of favourites.'Ayala' or the Indian mackerel is my most favorite one while fried, the Kerala way!
