  1. It’s 2-3 of green chillies.

  2. Prepare 1Handful of coriander.

  3. Prepare 1 tbsp of Desi ghee.

  4. You need 1 tsp of jeera.

  6. You need 1 cup of rolled oats.

Add soaked green gram and rice.

Pour water (double the amount or as needed to get desired consistency) and salt.

In this recipe, we have combined high fibre oats with yellow moong dal to make a Nourishing Khichdi with a difference.

Oats Spinach Moong Dal Khichdi step by step

  1. Grab your spinach and boil in water for 2 mins and then dip in cold water immediately.

  2. Blend green chillies and coriander together and spinach to make a purée.

  3. In a cooker mix ghee, Jeera, moong daal, rolled oats, salt and water. Cooking in medium heat for 2 whistles. Switch off the flame and let the cooker depressurise.

  4. In a separate pan add ghee, Jeera, hing, onions, garlic and ginger. Cook until translucent.

  5. Add turmeric, chilli powder and coriander powder and mix well. Add tomatoes and cook until tomatoes are mushy, add purée spinach mixture and mix well with a dash of salt. Cook for 4-5 mins.

  6. Add oats khichdi into the pan and cook for 3-4 mins. Add lemon juice and garam masala and stir well. Serve whilst still hot.

Veggies add a welcome crunch to this recipe, while also bringing in their share of fibre and antioxidants.

Perfectly spiced with just a mild touch of salt, this dish makes a healthy treat when served.
