Semolina mango cake. This easy eggless mango cake using mango pulp and semolina flour is one of the most delicious cakes I have tried. The best thing is that if you have semolina flour & mango pulp (or mangoes) at home, you can easily & quickly prepare this simple, easy & delicious semolina cake with mango flavor. Grease a bundt pan and dust with flour.

You can cook Semolina mango cake using 9 ingredients and 4 steps. Here is how you cook it.

Ingredients of Semolina mango cake

  1. You need of semolina or sooji.

  2. Prepare of mango chopped.

  3. Prepare of oil (I used olive oil).

  4. Prepare of sugar.

  5. Prepare of baking powder.

  6. It’s of powdered cardamom (elaichi).

  7. Prepare of chopped nuts (cashew and pistachio).

  8. You need of Little tutti fruity.

  9. You need of salt.

Mango Semolina Cake A delicious tea time cake,which contains no eggs or dairy or flour.

This cake is a perfect summer recipe-its light, fruity and delicately spiced with saffron and cardamoms.

Semolina mango cake instructions

  1. First of all prepare mango puree. Cut the mangoes and extract the pulp. Just blend along with sugar(no need to add water or milk). It should be a smooth consistency.

  2. In another bowl Mix the dry ingredients sooji, baking powder, chopped nuts, tutti fruity and salt very well..

  3. In another bowl add mango puree and oil. Mix them well.

Now add dry ingredients to wet ingredients and combine them well, there should not be any lump. Keep this batter for 20 minutes..

  1. Meanwhile, preheat the oven at 180C

Grease a baking pan and pour this batter. Garnish with some chopped nuts on the top and bake for 30-40 minutes.

Check after 25 minutes, insert a toothpick or skewer. If it comes out clean then remove the pan immediately.  Baking for longer will make this cake harden from the top and edges will be brown in colour.

Let it cool down completely. Cut and serve.
