We are gluten and dairy free, so we enjoy making over our favorites-tikka masala, slow cooker butter chicken , and even simple dishes like this one.

  1. It’s 2 of potatoes.

  2. Prepare 1/2 of brocolli.

  3. Prepare 2 of carrots.

  4. Prepare 1 bowl of mixed frozen veg.

  5. Prepare Handful of frozen peas.

  6. You need of Oil.

  7. Prepare 2 of red onions.

  8. It’s 6 cloves of garlic.

  9. You need 2 of medium sized pieces of ginger.

  10. You need 2 of green chillies.

  11. You need 4 of red dried chillies.

  12. You need 2 of fresh tomatoes.

  13. You need to taste of Salt.

  14. Prepare 1 teaspoon of chilli powder.

  15. It’s 1 teaspoon of turmeric powder.

  16. Prepare 1 teaspoon of on jeera powder.

  17. Prepare 1 teaspoon of kasturi methi.

  18. You need 1 teaspoon of garam masala.

  19. You need 2 tablespoons of double cream.

  20. You need 1 handful of fresh chopped coriander.

  21. Prepare of Cumin seeds.

Originally this was an Afghani chicken curry - I ended up reducing the amount of chicken & adding chickpeas, potatoes & peas to.

If you want to add more veggies, please feel free to do so.

Frozen okra also works well in this dish, as does fresh spinach added at the very last minute.

Directions: In a large pot, heat the oil over medium-high heat.

My family love veg curry step by step

  1. So start by boiling the veg in the steamer. Whilst this is happening get a pan add 1 tablespoon of oil then add the garlic ginger and green chillies. Let these simmer for 2 mins then add the red chillies. After 2 mins add the onions and tomatoes and leave them for 5 mins until they become soft. Then let this cool..

  2. Next step is to grind the mixture above into a paste so there are no onions or lumps. Then leave the mixture aside..

  3. Then take a tablespoon of oil in the pan add cumin seeds let them sizzle then add the turmeric powder chilli powder 1/2 teaspoon each with the kasturi methi. Let this simmer for 2 mins then add the mixture previously prepared add some water if it feels too thick. Then add the vegetables and mix them together..

  4. Then add salt chilli powder turmeric powder and jeera powder. Then mix all this then add the cream to give a lovely texture. To finish off sprinkle the garam masala and sprinkle the fresh coriander. Tastes yummy with rice or naan bread….๐Ÿ˜Š.

Swap in different veg to this family-friendly curry, or add a can of chickpeas to make it chunkier.
