Recipe: Perfect Efo riro Delicious, fresh and tasty.

Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

These are the local spinach varieties that are very popular and easily available.

In other parts of the world, any spinach greens will do.

Efo Riro - The African Stewed Spinach also popularly known as Efo riro is a one-pot stew with layers of flavor.

You can have Efo riro using 10 ingredients and 2 steps. Here is how you achieve that.

Ingredients of Efo riro

  1. You need of Vegetables.

  2. You need of Attarodo.

  3. Prepare of Onions.

  4. You need of Locust beans.

  5. You need of Chopped ponmo.

  6. It’s of Grinded crayfish.

  7. Prepare of Palm oil.

  8. You need of Maggi.

  9. It’s of Salt.

  10. You need of Shredded smoked fish.

It requires quite a number of ingredients but little work from the cook putting it all together (as long as you already have all your ingredients prepped).

Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.

Efo riro instructions

  1. Cut your vegetables and rinse then add boil water to it add salt and cover to get soft a bit then u rinse and squeeze d water if if it (I dont like water in my vegetables).

  2. Put ur palm oil on fire then add ur onions and locust beans then fry Abit add ur attarodo and Maggi let it cook very well then add your shredded smoked fish,ponmo, crayfish and cook well then add ur vegetables and stir low d heat and when d oil shows at top then ur efo iro is ready.

Efo riro is one of the popular vegetable soups in Nigerian.

It ranks with the likes of Afang and Edikang ikong.

While Efo riro is native to the Yorubas, Edikang ikong is native to the Efiks and Ibibios.
