Best eaten fresh out of the frying pan. Hi Lovelies, I'm finally sharing my Yamarita (Egg Coated Yam) recipe.

Method on how to prepare Yamarita Cut the yam in rectangular shapes or into the shapes you desire, wash and boil with salt and water.

Ingredients of Yam Fritters or Yamarita

  1. It’s 20 g of flour (optional).

  2. Prepare 2 of eggs.

  3. Prepare of Yaji or spiced suya spice.

  4. Prepare of Yam tranche.

  5. Prepare of Tomato.

  6. You need of Chili pepper.

  7. It’s of Pepper.

  8. Prepare of Lemon grass.

  9. You need of Lemon.

  10. You need of Salt and frying oil.

The water should not be too much so that the yam would not be too soft and break into pieces.

Beat the eggs in a separate bowl, add salt and seasoning to your desired taste and set aside. when I first heard the name YAMARITA, I was really expecting a very complex preparation process.

However, after sampling and doing, I was a little dissapointed though it still was very sweet and I ll pay to get a good one any day.

It was very easy for me to make as I was already good in making fritters like fish n batter, chicken nbatter etc.

Yam Fritters or Yamarita instructions

  1. Peel and boil yam in salted water. Allow to cool down in strainer..

  2. Break eggs, add yaji or spiced suya spice, add flour (optional) and mix well check taste. Set aside..

  3. Heat oil deep cooled yam into egg mix. The addition of flour however helps the egg mixture to coat well..

  4. Remove from egg mixture and fry in batches. And out and cool on paper towel. Continue with the other batches until done.

  5. Wash Tomato, deseed pepper and blend. Peel wash and chop onion. Remove the stalk from the lemon grass and chop well..

  6. Heat oil, add chopped onion. Allow to heat for some minutes. Add your grinded Tomato paste. Add salt, add the chopped lemon grass. Check taste and allow to cook for 3minuts. Serve with you yam Fritters or Yamarita. Garnish with chili pepper.
