How to Summer Yummy Ekpankukwo Delicious, fresh and tasty.

Ekpankukwo. Ekpang Nkwukwo is one of the Nigerian cocoyam recipes made with grated cocoyam, water yam, cocoyam leaves and periwinkle. It is a Nigerian food recipe native to the South South Eastern Nigeria, the Cross River and Akwa Ibom States of Nigeria. Ekpankukwo is a dish prepared by Efik/ Calabar people in Nigeria and is enjoyed by everyone.

Before wrapping youll add little water and mix the puree.

Some people react to cocoyam leaves so we use ugu leaves to wrap the puree.

Ekpang Nkukwo is similar to the Ijebu Ikokore (recipe HERE), as they are both pottage dishes.

You can cook Ekpankukwo using 11 ingredients and 8 steps. Here is how you cook it.

Ingredients of Ekpankukwo

  1. You need 1 of medium wateryam.

  2. It’s 1/2 of sized cocoyam.

  3. You need leaves of ugu.

  4. Prepare of palm oil.

  5. You need of crayfish.

  6. You need of pepper.

  7. You need of maggi.

  8. It’s of salt.

  9. It’s of shelled perewinkle.

  10. You need of dry fish.

  11. You need of onions.

While Ikokore is only made with water yam, Ekpang Nkukwo is made with water yam and cocoyam and then wrapped in leaves.

Ekpang Nkukwo is one of the traditional delicacies of the Efiks and Ibibios.

Made with cocoyam and little wateryam, this meal is relished by many and contains the basic classes of food, the flavour and taste are heavenly mouth-watering.

Ekpang is a traditional Nigerian dish made with Cocoyam or water yam.

Ekpankukwo instructions

  1. Peel and grate the cocoyam and wateryam. then prepare the ugu leaves by rinsing.

  2. Season the grated cocoyam and wateryam with small salt to taste.

  3. And wrap bit by bit in the ugu leaves until all finished.

  4. Then wash and rinse the broken tip periwinkle plenty times in water and put in the pot.

  5. Add palm oil and please the wrapped leaves of wateryam on it.

  6. Add crayfish and pepper and maggi with salt,dryfish,onionand place on fire, then add boiling water.

  7. To cover the pot and cook on low heat.

  8. You can stir after 15 minutes so it does not burn under and continue cooking until the cocoyam and wateryam is cooked add peri wrinkle.
