  1. cut the paneer into medium diamond shaped pieces; if using frozen paneer then thaw it properly before cutting.

  2. grind all the dry ingredients for marinate into a coarse paste in a food processor or a mortar & pestle(I used the mortar & pestle gives a good coarse paste).

  3. in a bowl add the paste, the oil, lemon juice & spring onions & mix well.

  4. add paneer pieces to this mix, mix well & let it marinate for half an hour.

  5. when the paneer is marinated clean the paneer of the marinate as much as u can without washing it. reserve 1 teaspoon of the marinate & discard rest.

  6. heat a saucepan.add the olive oil,butter.dont let butter brown.

  7. add the onions,& the whites of the spring onions.

  8. saute till the onion becomes translucent,add the turmeric,thyme ,garam masala and the reserved marinate .add the tomatoes,cook for 2 minutes & toss well.

  9. add the greens of the spring onions,toss well.cook uncovered for 5 minutes.

  10. now add the paneer.toss well and cook again for 5 more minutes on medium heat.

  11. mix well and let it cook for 2 more minutes on low heat.

  12. remove in a plate & serve garnished with spring onion greens.
