Recipe: Eating on a Dime Pork Dry Masala (Kerala Style) Delicious, fresh and tasty.

Pork Dry Masala (Kerala Style). Pork cooked and roasted with chilli, spices and coconut. One of my favorite dish since my childhood days. I adapted this recipe from my grand mother.

Pork Dishes (like Curry,masala,fry ,ularthiyathu etc) are famous in Christian families in Kerala,I am introducing Kerala Style PORK DRY MASALA here for you.

So, to keep up with the tradition here's a new pork recipe.

This is yet another Kerala style pork recipe.

You can cook Pork Dry Masala (Kerala Style) using 16 ingredients and 8 steps. Here is how you cook it.

Ingredients of Pork Dry Masala (Kerala Style)

  1. It’s 500 gm of Pork cuts - (Boneless cubes w/o skin).

  2. You need 50 gm of Ginger Garlic Paste -.

  3. It’s 10 ml of Vinegar -.

  4. It’s to taste of Salt -.

  5. It’s 1/2 teasespoon of Turmeric powder -.

  6. Prepare 20 gm of Black pepper Crushed -.

  7. Prepare 200 gm of onion Sliced -.

  8. You need 20 gm of Chopped ginger -.

  9. You need 20 gm of Chopped garlic -.

  10. Prepare 25 gm of chilly Greec - splited.

  11. You need 10 gm of Curry leaves -..

  12. You need 20 gm of Whole spices -.

  13. Prepare 320 gm of Coconut pieces - small slices -.

  14. It’s 2 tbsps of Masala Garam Masala Home made Meat or Garam -.

  15. Prepare 1 tbsps of Corrinader powder -.

  16. Prepare 2 tbsps of Coconut oil -.

Similar to how there are different recipes for beef fry, which looks more or less the same, but a few additions and changes in the ingredients make for a different taste, there are different pork fry recipes too.

SPICES AND OTHER INGREDIENTS USED IN THIS HOT AND SPICY PORK.

The pork pieces are cooked with spices like turmeric powder, cracked peppercorns, meat masala powder along with other like dry red chillies, onion, ginger, garlic, salt and raja mircha aka bhut jolokia/ghost chilly/naga king chilly.

Check for the seasoning add salt or if you need it more spicy you can add pepper powder to it.

Pork Dry Masala (Kerala Style) instructions

  1. Add cleaned Pork pcs in a Bowl and marinate with Ginger garlic paste,Salt,Vinegar,Black pepper,turmeric powder and some curry leaves.keep it 30 minutes in a bowl..

  2. Heat 2 tbsp oil in a pressure cooker and add Add coconut pieces and stir fry until coconut pieces are light brown..

  3. Add whole spices with sliced onion, ginger, garlic and curry leaves; stir fry until onions become golden brown,then put tomatoes and Green chillies..

  4. Reduce flame and add meat masala and other powders,sauté making sure not to burn the powder..

  5. Add cleaned pork pieces and continue stirring until masala coat pork pieces. Add ¼ cup of hot water and pressure cook the pork for 3-4 whistles on low flame or until the meat is cooked well..

  6. Once the steam vents out open the lid and check if the pork is cooked well..

  7. Now on medium heat, cook the meat pieces until the stock water is completely dry, stirring in between. Turn off the flame..

  8. For Dry frying, heat remaining oil in a non-stick pan add cooked pork pieces and stir fry well until pork is browned..

This recipe calls for medium spicy pork) HOW TO PREPARE Start with cooking pork in the pressure cooker.

Place pork along with onions, green chilies, turmeric, coriander, garam masala, black pepper, ginger, garlic, white vinegar, curry leaves and salt in a pressure cooker.

Cover with lid and place over high heat.

Unlike other non-veg recipes, masala powder is barely used in this recipe.

The flavour mostly comes from the pork itself, the masala is used in a supportive role to enhance the pork's flavour.
