How to Cook Yummy Kerala style Pork Fry Delicious, fresh and tasty.

Kerala style Pork Fry. Pork cooked and roasted with chilli, spices and coconut. One of my favorite dish since my childhood days. I adapted this recipe from my grand mother.

As with the type of pork, I always go for cuts minus the fat.

The trimmed cuts give a slight crispiness to the meat during the final stir frying stage.

This is yet another Kerala style pork recipe.

Ingredients of Kerala style Pork Fry

  1. Prepare 1 kg of Pork -.

  2. It’s 1 tbsp of Chilli powder -.

  3. You need 2 tsps of Corriander Powder -.

  4. Prepare 1 tsp of Turmeric Powder -.

  5. It’s 1 tbsp of Vinegar -.

  6. It’s to taste of Salt.

  7. It’s 1 of Onions -.

  8. Prepare 1 of Ginger " - piece.

  9. It’s 1 pod of Garlic -.

  10. You need 1/2 cup of Coconut scrapped -.

  11. It’s 4 of Cardamom -.

  12. You need 5 of Pepper corns -.

  13. It’s 5 of Cloves -.

  14. It’s 1 of Cinnamon big -.

  15. Prepare 1 tsp of Jeera -.

  16. It’s of Curry leaves.

  17. It’s 1 tsp of Pepper powder -.

  18. Prepare 1/2 tsp of Garamasala -.

Similar to how there are different recipes for beef fry, which looks more or less the same, but a few additions and changes in the ingredients make for a different taste, there are different pork fry recipes too.

Pork Fry /Kerala Style Pork Pepper Fry.

Pork Fry or Pork Roast is a classic traditional dish in Kerala Christian homes.

It is a much-enjoyed family recipe, savoured heartily as appetizer or as side dish for rice, Kappa, Appam, Parotta or Rotis.

Kerala style Pork Fry step by step

  1. In a pressure cooker,combine  pork,Chilli,corriander,turmeric,vinegar,salt,chopped onions,crushed ginger & garlic & cook till done..

  2. Meanwhile pulse the grated coconut in the mixie twice sothat its evenly crushed (not a paste).

  3. In a nonstick pan heat 1 tsp oil & add the crushed coconut & fry.when it starts to change color,add the whole spices & Saute tillyhe coconut is well browned.keep this aside..

  4. Open the cooker & pour the stock to a wide nonstick pan & cook till water almost dries..

  5. Now add the cooked pork into this & half of the fried coconut mixture to it & cook till it starts to brown..

  6. Add the pepper & garamasalas & the remaining browned coconut & continue frying in medium heat till nicely browned..

This is mainly popular among Christians in Central Kerala; Kottayam, Ernakulam and Thrissur regions were Pork is devoured for all special occasions.
