But didn't make it because it is too much for a one person to finish.

This Coconut Semolina Cake or Revani as we call it in Greece is a light, sponge cake that's soaked in syrup.

Ingredients of Coconut Semolina Cake

  1. Prepare of Crushed semolina.

  2. Prepare of Refined flour.

  3. Prepare of Baking powder.

  4. Prepare of Baking soda.

  5. You need of Desiccated coconut.

  6. It’s of Normal curd.

  7. It’s of Oil/butter.

  8. It’s of Powdered sugar.

  9. You need of Melted white chocolate.

  10. You need of Honey(optional).

  11. You need of Vanilla essence.

  12. Prepare of or as required Milk.

  13. Prepare of tutti frutti.

  14. It’s of Cashew nut.

It's flavored with lemon zest that goes great with coconut.

You can grab a piece of it while it's still slightly warm if you can handle all the warm syrupy goodness, or let it cool in the fridge.

This is a moist and delicious coconut cake made with semolina (sooji) and fresh ground coconut as well as coconut milk.

A rich egg-based cake and takes less than an hour to make.

Coconut Semolina Cake instructions

  1. Firstly preheated the oven at 180°c for 10 minutes..

  2. Take a cake tin and grease it with melted butter. Dust the cake tin with the flour and sift the flour to make it settle evenly on the tin. Shake the tin to remove extra flour and keep it aside..

  3. Take a bowl and add semolina refined flour coconut baking powder and baking soda. Mix well and keep aside..

  4. Now take a deep bowl and add curd and oil/butter and beat them properly..

  5. Add sugar and white chocolate and mix well..

  6. Add honey and vanilla essence and mix well..

  7. Add dry mixture and mix well..

  8. Add milk and set consistency..

  9. Add some tutti frutti and mix well..

  10. Now pour the batter in the cake tin and spread it evenly with the help of spatula..

  11. Garnish it with tutti frutti and cashew nuts and bake it in the preheated oven at 180°c for 30-35 minutes..

  12. After 35 minutes check it with toothpick. If toothpick is clear then take out. Otherwise bake for another few minutes..

  13. Let it cool for 15 minutes and de-mould it..

  14. The Coconut Semolina Cake is ready to be served immediately..

Instructions; Mix the coconut, semolina, baking powder and salt and keep aside.

Mix butter and sugar till fluffy.

Add the egg yolks to the mixture and beat again.

It should be like a thick batter.

Set aside; Whisk together the semolina, baking powder, and sugar in a large bowl.
